Andhra sambar is a classic dish from Andhra Pradesh. It is a part of day to day meal, a good change from the regular sambar. It is made with mixed vegetables (Bottle gourd, pumpkin, drumsticks and other seasonal vegetables), tamarind pulp and spices.
• Curry leaves
• Urad dal
• Cumin seeds
• Mustard seeds
• Bottle guard
• Chilli powder
• Turmeric powder
• Red chilies
• Channa dal
First cut the all vegetables in to medium pieces.
Put all these vegetables in the dal which is already cooked.
Now put salt, chili powder 1 spoon, sambar powder almost 2 spoons, turmeric 4) the juice from tamarind out this also in dal.
Mix everything properly and put the cooker for 1 Whistle only so that all the vegetables with tamarind juice will cook nicely not too mashed so 1 vessel is enough
After that put the tadka with cumin seeds, Urad dal, chana dal, curry leaves, red chilles,
musturd seeds. Fry 80% nicely not too dark chopped cilantro in the sambar
Put the tadka in to the sambar….
Pure south Indian Andhra sambar is ready……..
