None other than “The Potatoes”

Potatoes play an eye-catching role in Mr Idli.

The tempting potato gets mashed and mixed with onion, spicy green chillies, pinch of ginger goes into the tadka gets chaunk with Mustard seeds decorated with coriander gives an astonishing taste to the Dosa.

Voyage of Potato

The English word potato comes from Spanish patata (the name used in Spain).

Magnitude of Potato

The potato contains vitamins and minerals, as well as an assortment of phytochemicals, and trace amounts of magnesium, phosphorus, iron, and zinc also best known for its carbohydrate content.

Well there are close to 4000 different varieties of potato.

Potato starch is used in the food industry as, for example, thickeners and binders of soups and sauces, in the textile industry, as adhesives, and for the manufacturing of papers and boards.

Potato skins, along with honey, are a folk remedy for burns in India.

Potatoes (mainly Russets) are commonly used in plant research.

South Asia : In South Asia, Potato is very popular traditional staple.

In Northern India, alu dum and alu paratha are a favorite part of the diet; the first is a spicy curry of boiled potato, the second is a type of stuffed chapati.

A dish called masala dosa from South India is very notable all over India. It is a thin pancake of rice and pulse paste rolled over spicy smashed potato and eaten with sambhar and chutney.

Poori in south India in particular in Tamil Nadu is almost always taken with smashed potato masal.

The Aloo gosht, Potato and meat curry, is one of the popular dishes in South Asia, especially in Pakistan.
